Ingredients
1 slice sourdough, 2T beet hummus, cherry tomatoes, broccoli, a little pine nuts and olive oil
Steps
1. Steam the broccoli, then cut it into small pieces.
2. Halve the cherry tomatoes, then cut into thirds.
3. Toast the pine nuts in a hot pan until golden.
4. Spoon the beet hummus onto a plate. (See 6/26/26 for the beet hummus recipe.)
5. Top with the prepared broccoli, cherry tomatoes, cranberries, and toasted pine nuts, then drizzle with olive oil.
Eat alongside crisply toasted sourdough.
