Ingredients

2 servings buckwheat noodles, 1 cup corn, 1 egg, 10g seaweed, crispy chili onion, (dressing) 1.5T tahini sauce, 1.5T miso, 2T soy sauce, 1T vinegar, 2t sesame oil, 1T lime juice, 1 cup water

Steps

1. Mix 1.5T tahini sauce, 1.5T miso, 2T soy sauce, 1T vinegar, 2t sesame oil, and 1T lime juice, then stir in 1 cup water (adjust the water to taste). 2. Boil the buckwheat noodles, adding a splash of cold water to the pot about three times. 3. Pan-fry the corn to use as a topping. 4. Chop the scallion, soak the seaweed, and hard-boil the egg to prepare. 5. Plate the noodles from step 2, pour over the sauce from step 1, top with corn, seaweed, and egg, sprinkle with scallion, and finish with spicy crispy chili onion (or chili oil if you don't have any).
