The most famous #Peach story: Dongfang Shuo secretly ate three peaches that had been offered to Emperor Wu of Han, and lived for 3,000 gapja as a result. One gapja is 60 years, so 3,000 gapja is 180,000 years - roughly the era the Paleolithic, right around when Homo sapiens first appeared in history. Anyway, that's the story.
Given a lift with cranberries, a summer-only, about 230kcal, Peach Tomato Salad.
Ingredients
1 tomato, 1 nectarine, 1/4 onion, 1T olive oil, a little (frozen) cranberry, salt, a pinch of pepper, 1T ricotta cheese
Steps
1. Slice 1/4 onion and soak briefly in water.
2. Meanwhile, cut the tomato and nectarine into wedges, rinse the basil, and pick off just the leaves.
3. In a mixing bowl, combine the onion from step 1, the tomato and nectarine from step 2, a little frozen cranberry, salt, pepper, and olive oil, and mix well.
4. Plate and finish with a drizzle of olive oil.
