In pasta sauce, the role of colorless, odorless vodka is emulsification. It helps the sauce soak into the conchiglie, become one team, become perfectly unified - supporting that process. Actually, "leading" it might be more accurate than "supporting."

Ingredients
2 cups conchiglie pasta, 1/2 onion, 5 cloves garlic, red pepper, 3T tomato paste, 1/4 cup vodka, 1 cup heavy cream, salt, pepper, olive oil, a little grana padano cheese and parsley
Steps
1. Boil the conchiglie in salted water, drain, drizzle with olive oil, and toss well. (Leave it alone and the pieces will stick together in chaos.)
2. Heat olive oil in a pan and sauté the chopped onion, garlic, and red pepper.
3. Add 3T tomato paste and 1/4 cup vodka, and mix well.
4. Pour in 1 cup heavy cream and let it simmer gently over low heat, stirring slowly and tasting as you go. Add 1t tuna fish sauce. Add a little pepper too.
5. Add the pasta and mix once more.
6. Plate it and top with grana padano cheese and a little red pepper and parsley.
