Christmas Galette

Apparently the red suit — nowhere in that original description — was invented later by Coca-Cola's marketing team. Today's breakfast is a Merry Christmas edition galette. 1. In a hot pan with olive oil, sauté garlic and onion, then set aside. 2. In the same pan with olive oil, cook the spinach with a little salt and pepper, and sear the prettiest carrots in the world the same way. Prep the bacon and tomato too. 3. With a touch of olive oil in the pan, lay down a store-bought crepe, crack an egg onto it, place the reserved garlic and onion around the edge of the egg, and fold in all four sides. 4. Move it to a plate and top with the prepared spinach, carrot, tomato, and bacon. Finish with pepper and a generous helping of parmesan. #galette
