Chayote is a fruit of a vine plant in the gourd family (squash/cucumber family) native to Mexico and Central America. In English it's chayote, in Chinese it's called 'Buddha's hand melon' (佛手瓜) because it resembles Buddha's hand, and in Brazil it's called chuchu. It tastes somewhere between cucumber and radish, so it works well in salads in place of cucumber; I haven't tried it shredded like mu-chae (Korean radish salad) but it would surely be good, and it's perfect for som tam. I was debating whether to use it for som tam, but then thought of shio kombu salad, so today I used it in place of cucumber.

1. In a mixing bowl, combine the butterhead lettuce, cherry tomatoes, chayote, and tofu, add the shio kombu and sesame oil, and mix well.
2. Plate it and top with radish.
