This is the Kalmond Pasta from Karinji/Linga's snack bar in Hapjeong that I bought a few days ago. It apparently has garlic scapes in it, but I didn't have any, so I substituted frozen green beans.
Turns out it wasn't plain Kalmond but Kim's Kalmond, with added seaweed.
You need spaghetti, garlic, pepperoncino, and Kalmond.
Boil spaghetti in well-salted water.
Heat olive oil in a pan, sauté thinly sliced garlic, add 2 chopped pepperoncino, 1 tsp fish sauce, today's kick — 2 tbsp Kalmond, the spaghetti, and 1/2 cup pasta water, sauté, then add green beans and cook a bit more.
Turn off the heat and mantecare (emulsify).
Plate the spaghetti and top with a little Kalmond.
👆 To recreate the store-bought taste use 1 tsp fish sauce; if you prefer a milder flavor, skip the fish sauce or use just 1/2 tsp — Kim's Kalmond is quite salty on its own.
