So I read a long post from them explaining they were ending collaborations with other brands, in the name of sustainability, so as not to chase after cheap, fleeting stimulation — and it hit me a little. Inspiration really is scattered everywhere in the world.
The house filled with the smell of oil and fish sauce from early morning. Above all, Thailand's most fragrant #thaifriedegg, Nam Pla Wan Kai Thod.
Boil eggs in a pot of water to somewhere between soft- and hard-boiled.
While that's happening, make the dressing: mix 1 palm sugar, 1 fish sauce, 2 lime juice. (This combo works fine in place of the usual tamarind juice, fish sauce, and sugar recipe.)
Pour oil in a pan and fry the boiled eggs until golden brown.
Halve the eggs, plate them, pour over the dressing, and top with fried shallots and parsley (instead of cilantro).
