Professional chefs package ingredients nearing their expiration date as the chef's special and sell them off. Anthony Bourdain, in Kitchen Confidential: Adventures in the Culinary Underbelly, warned never to order the Monday special, since it's almost certainly a way of using up leftover ingredients from the weekend.

Dug deep into the back of the freezer to hold off on another dawn delivery order — a roughly 325kcal tomato shrimp fish balls
Ingredients
5 shrimp fish balls, 1t minced garlic, 4T tomato sauce, 1/4 cup green peas, a little Grana Padano cheese, olive oil, pepper
Steps
1. Boil the shrimp fish balls and green peas in boiling water.
2. Heat olive oil in a pan, sauté the garlic, then pour in the tomato sauce and warm it through. Add the shrimp fish balls from step 1 and mix well.
3. Plate it and top with green peas and chopped scallions. Finish with Grana Padano cheese, pepper, and truffle oil~
