Heat olive oil in a pan and warm through the tofu noodles. Pour over tomato sauce and toss gently so the noodles don't break apart. Pepper, pepper, pepper, pepper, plate it, and finish with a little parmesan. #tomatopasta
Regular pasta is made from durum wheat, a different variety from the wheat we typically know (the kind used for bread). Not only is its gluten content higher, but its Glycemic Index - a measure of how quickly it converts to blood sugar - is the second lowest after beans. (Though there's some debate over the GI index, so it's not something to take as gospel.)
It's as simple to make as instant noodles, and pairs well with vegetables like mushrooms, onion, and broccoli, so it's great nutritionally too. Still, eat too much and you'll gain weight. That's when tofu noodles step in for pasta.
