According to British psychologist Cliff Arnall, the third Friday of June is supposedly the happiest day of the year — good weather, vacation just around the corner, low stress. But that sounds like someone else's story, some other country's story.
With my mind scattered every which way, here's a One Plate Pasta, about 800kcal, that dramatically cuts down on dishwashing while still keeping all the flavor — and above all, showing off some very Instagrammable, colorful noodles!
Ingredients
Pasta (a generous single serving), 1 egg yolk, 1t minced garlic, chopped parsley, 3T olive oil, salt, pepper, a little grana padano cheese
Steps
1. Boil the pasta in salted water.
2. On a plate, combine 1 egg yolk, 1t minced garlic, chopped parsley, 3T olive oil, salt, pepper, and a splash of pasta water, and mix evenly. Grate some grana padano cheese on top.
3. Add the cooked pasta and toss well. Top with a little more cheese.
