In Thai, pad means 'stir-fried' and see ew means 'soy sauce' — so it's a dish stir-fried in a soy sauce base.
As long as you've got the ingredients ready, it's a simple 5-minute breakfast.
Mix 2T soy sauce, 1T fish sauce, 1T oyster sauce, and 1T sugar together to make the sauce.
Heat oil in a pan, sauté minced garlic, then add 2 eggs and stir-fry.
Add rice noodles that have been soaking overnight along with the sauce, and stir-fry until the noodles soak it all up. Toss in whatever vegetables you like — carrot, spinach, bean sprouts.
