Koyadofu is freeze-dried tofu widely used in Japanese cooking. It's known to have a higher protein content than regular tofu, be easier to digest, and be quite effective at suppressing cholesterol.
Tofu that's been frozen and then thawed gets about 6 times the protein content.

Ingredients
1/2 block tofu (freeze it beforehand and thaw it), perilla oil, mentaiko (pollock roe) mayo, scallions
👉Here's how
1. You can mimic koyadofu by freezing then thawing regular tofu. Take the frozen tofu out before you go to sleep.
2. Cut into bite-size pieces and squeeze out the water. Heat perilla oil in a pan and grill until golden. (Even after squeezing, the tofu keeps releasing water, so a non-stick pan is recommended.)
3. Plate it and top with mentaiko mayo and scallions.
