The cleaver commonly called a "chai dao" (菜刀) literally translates to "vegetable knife," but in practice it's used for cutting or mincing fruit, vegetables, or boneless meat. So basically it's just a kitchen knife. It's fairly heavy, but if you use that weight well, you can prep ingredients smoothly without much effort. And of course, it slices pizza just as well as a pizza cutter.

Ingredients
1 potato, 2 tortillas (15cm), 1T ricotta cheese, 1t salt, a little rosemary, 1T olive oil
👉Here's how
1. Slice the potato with a mandoline and sprinkle with salt. This makes it crispier.
2. Brush olive oil on a pie pan, lay down a tortilla, and spread 1T ricotta cheese. Add another tortilla on top, squeeze the water out of the sliced potato, and spread it evenly. Sprinkle 1t salt.
3. Mince rosemary and scatter it on top. Drizzle with a swirl of olive oil and bake in a 180°C oven for 30 minutes. (Or you can just pan-fry it.)
4. Cut into quarters with a light touch using the chai dao.
