20251203 #breakfastdiary day 1577, -9°C/cloudy Aimed for a 550kcal #EnokiOmelet, but it didn't quite land as that, and calling it a rice bowl feels a bit off too, so I'm settling on 'omelet-style rice bowl.'

Ingredients

300g enoki mushrooms, 2 eggs, 1 portion grain rice, chives and sesame seeds, a little, (sauce) 2T water, 1T soy sauce, 1 clove minced garlic, 1T mirin

Steps

1. Mix 2T water, 1T soy sauce, 1 clove minced garlic, and 1T mirin well. 2. Heat olive oil in a pan, spread the enoki mushrooms out evenly, and pan-fry on both sides. 3. Pour in the sauce from step 1, then pour 2 beaten eggs into the pan and cook thoroughly (that's what makes it an omelet). 4. Put the omelet from step 3 on top of the grain rice and top with chives and sesame seeds. A drizzle of sriracha for a bit of heat is nice too.
