Both in Italy and here in Korea, in hard times people boiled up corn porridge to eat — that's polenta. Interestingly, in southern Italy it was also used as a mocking term for northerners.
The ratio of polenta to water is 1:4. Add salt and olive oil to boiling water, then stir in the polenta little by little. Add a generous handful of parmesan and turn off the heat.
Top with oyster mushrooms sautéed in olive oil, salt, pepper, and herbs, then finish with a generous grating of parmesan. #polenta
Next time, I'll try slicing the parmesan thin instead of grating it.
