Cha chaan teng (茶餐廳) - a "Hong Kong-style snack bar meets café" that serves tea alongside simple meals. I boiled the egg noodles but forgot to toss them with oil right after, so they came out looking all broken apart, like the kitchen chef stepped out and a part-timer had to hastily reheat them in the microwave. About 360kcal of Hong Kong-Style Soy Sauce Fried Egg Noodles for one.
🇭🇰 In Hong Kong this is called "si yau wong cha min" (豉油皇炒麵), literally "soy sauce fried noodles." The defining feature is frying the noodles over high heat until they get a nice crisp char.

Steps
01
Boil the egg noodles for 5 minutes, rinse in cold water, and drain well in a sieve. If you're in a hurry, press them dry with a paper towel (important!). Toss with a little oil so they don't stick together.
02
Thinly slice the shiitake mushrooms, julienne the onion, and cut the scallion into 5cm lengths.
03
Heat 1 tsp canola oil in a pan and quickly stir-fry the onion, shiitake, and scallion from step 2 over high heat. Set aside.
04
Heat 1 tbsp canola oil in the pan, spread the noodles from step 1 out flat, and fry until crisp for 1-2 minutes. Flip and fry the other side as well.
05
Add 1 tbsp soy sauce, 1 tsp dark soy sauce, and 1/2 tsp sugar, stir-fry quickly, then add back the vegetables from step 3 and mix. Add the scallion whites and give it one more light toss.
