Italy
urgently needs
to import gim
Authentic Italian carbonara is made from just four things: egg yolk, pecorino cheese, guanciale (pork cheek), and pepper. The key is working the yolk into the hot noodles to form a thick, glossy sauce. Today, channeling that same spirit, let's make a seaweed carbonara bursting with umami, using seasoned gim (dried seaweed), egg yolk, soy sauce, and a spoonful of sesame oil.
290kcal seaweed pasta with grilled shrimp.

Steps
01
Finely crumble the seasoned gim, then mix in soy sauce, sesame oil, honey, ground sesame seeds, and egg yolk to make the gim sauce.
02
Add salt to boiling water and cook the whole wheat spaghetti.
03
Cut the shrimp into large pieces and sprinkle with pepper. Heat olive oil in a pan and sauté with the minced garlic and pepperoncino.
04
Toss the spaghetti into the gim sauce from step 1, adding a little pasta water at a time, about 1/2 cup total.
