Notes

20251030 #breakfastdiary 1546, 7°C/mostly cloudy Crostini is Italian for small, crisp bread. If bruschetta — bread topped with tomato, basil, and the like on a larger slice — is closer to a simple meal, crostini uses a wider range of toppings beyond tomato and basil, including seafood, meat, and fruit, so... it's not quite dessert, more like an appetizer. About 643kcal, three kinds of crostini: avocado, tomato, mushroom.

Steps

  1. 01

Slice the baguette 1cm thick, brush with olive oil, and toast until crisp.

  2. 02

For No. 1: spread salsa on the baguette and top with slices of well-ripened avocado. Finish with a little pepper and Maldon salt.

  3. 03

For No. 2: whip lemon juice and 1 tsp olive oil into 2 tbsp ricotta cheese, spread on the baguette, then top with a little basil pesto and the cherry tomatoes (cooked with olive oil, salt, and pepper). A touch of balsamic is nice too, but since this one's the centerpiece, finish with basil instead.

  4. 04

For No. 3: top with the whipped ricotta from step 2 and thinly sliced shiitake mushroom — convenient to sauté the mushroom on the side while cooking the cherry tomatoes in step 2. Finish with pepper and parmesan cheese.
