Eggplant Egg Slut

Today's is one that first appeared on January 15, 2022 — about two years ago now — Halve the prettiest eggplant in the world lengthwise and press down firmly on the flesh to make room. Season with salt and a generous amount of pepper, then roast at 180°C for 5 minutes. Tuck an egg into the halved eggplant along with tomato and garlic, then roast for another 15 minutes. (Time varies depending on your oven.) Pull it out of the oven, finish with Italian parsley, vinaigrette, and a generous crack of pepper.
