I used to throw around the word 'crossover' without really understanding what it meant. Getting the breath of the lungs to sync with the beat of the heart isn't easy — a bit like dropping an egg yolk into a hot pan without it turning into scrambled egg, instead coaxing it into a creamy sauce of just the right thickness. (Something like that.) Boil the pasta in salted water. (The guanciale is salty enough on its own, so go easy on the salt.) While it cooks — Toast whole peppercorns — the prettiest peppercorns in the world — in a pan, then crush them and set aside. Grate Parmesan into three egg yolks. (No pecorino on hand.) Sear the guanciale in the pan and set it aside, leaving just a little of the rendered fat behind. Pour some pasta water into the pan, add the pasta, cook briefly, then turn off the heat and stir in the pepper, guanciale, and fat. (Let it cool slightly.) (From here, one moment of carelessness and it turns into scrambled egg.) Add the egg yolk and Parmesan mixture and toss briskly — authentic #carbonara
