Back on 2023.4.21, I wrote that for Italians, gnocchi with parmesan might be a lot like our rice mixed with soy sauce and margarine (not butter) when there's no appetite or nothing much to eat. I think that's really true.
Boil store-bought gnocchi in boiling water. Scoop it out once it floats to the surface.
Heat olive oil in a pan, toss the gnocchi around, then add a knob of butter. Season with parmesan. Heat the pan a little more and grate in some coarser parmesan — it sticks to the gnocchi in crispy little bits, which is the best part. (How to put it? Like a bit of nurungji, that crispy scorched rice.)
Today, to make it feel like a home-cooked Italian meal, I serve it in a bowl with one more shower of parmesan on top.
