My throat is scratchy. A thick, creamy white sauce would go down easy - alfredo sauce. But if I think about the calories, this is a dish I shouldn't be eating: Creamy Alfredo Garlic Spinach Gnocchi.
Ingredients
450g gnocchi, 3 cloves garlic, 1/2 onion, 1 cup heavy cream, 50g ricotta cheese, 1t paprika powder, 2t herb powder, 1 cup parmesan cheese, 2 cups spinach, salt, pepper
Steps
1. Bring water to a boil in a pot, add the gnocchi, and cook until the gnocchi float to the surface, then scoop them out. Transfer to a bowl and toss with a little olive oil so they don't stick together.
2. In a pan, heat olive oil and butter, and sauté the thinly sliced garlic and chopped onion.
3. Pour in the heavy cream, and once it comes to a light simmer, add the ricotta cheese and mix evenly.
4. Season with paprika powder, herb powder, salt, and pepper.
5. Add the parmesan cheese and stir slowly.
6. Add the chopped spinach and mix evenly.
7. Add the gnocchi from step 1 to the pan and toss lightly.
8. Plate it and sprinkle with parmesan cheese and a little pepper.
