Anchovy Pasta

20230429 #breakfastdiary 743, 14°C/rain The #anchovies I made last week turned out not too salty, so I decided to use them generously. Sauté minced garlic and shallot in a heated pan, then add red pepper flakes. Add the anchovies and pour in white wine, letting the alcohol carry off the fishy smell along with it. Add the pasta and some pasta water, toss it around, turn off the heat, finish with a bit of mantecatura, and plate. Given how fishy it smells, this anchovy pasta is pretty much a bust — but it seems my sense of smell is coming back.
