Tortilla Pizza Ritual

20210330 #breakfastdiary 47, 1°C/clear Some people ask whether the food in these photos is really 1) made every single morning and 2) actually eaten — so here's a post to answer that. Take this morning, for instance: 6:25 - Out of the shower, oven preheating, mozzarella on a store-bought #tortilla. 6:28 - Wash and trim 2 tomatoes and a handful of spinach. 6:37 - Pull the tortilla out of the oven (the mozzarella's melted nicely), scatter on the spinach and tomato, and drizzle with a swirl or two of olive oil. 6:40 - Grate some parmesan on top and eat while reading the news or watching YouTube. Then, dishes. Morning commute time can feel like time on Miller's planet from Interstellar (1 hour there = 7 years on Earth), but somehow this little routine has become a precious #ritual that gets my day started.
