Limitless Parsnip & Parsnip Soup
2020-11-30
Notes
20201130, #Limitless (2012), starring Bradley Cooper, follows a man who stumbles onto a pill called NZT that lets him use 100% of his brain.
The scene that stuck with me was the visual effect at the moment he swallows the pill — the moment a human brain switches to 100% — where a hologram-like double steps out of the protagonist and calmly looks back at him. That double felt like another self, standing one step back, able to see me objectively. I have no idea whether the filmmakers meant it that way.
As always, more or less, it's a Monday morning commute with a busy mind — even more so with the year winding down. No NZT for me, but I hope this week too I can step back, look at myself objectively, and make the right calls.
(Super-simple) Salmon Ceviche
-Dice the star of the show, the salmon, into bite-sized pieces. (The star has to make its own separate entrance.)
-Dice bell pepper, cucumber, tomato, and black olives to the same size as the salmon.
-Add the pre-cooked quinoa and the rest of the ingredients, then fold in the salmon and mix gently.
-Taste as you go, adding salt, pepper, and lemon juice, then finish with olive oil and toss well.
Parsnip Soup (made last night)
-In a pan, add butter, onion, and roughly chopped parsnip, and sauté.
-Add water and vegetable stock to the sautéed pan and bring to a boil.
-Purée finely with a hand blender. (Heavy cream would be nice here, but I didn't have any) Add a splash of milk and simmer.
