It's cold enough that the radish I'd left out in the utility room had frozen solid by the time I cut into it. But undeterred, #braisedradishricebowl
Mix 1 soy sauce, 1 mirin, 1/2 sugar, and a little minced garlic for the sauce. (Taste and adjust the ratio as you go.)
Accordion cut! Slice the radish into 1.5cm-thick pieces and score one side vertically, the other diagonally. (Laying chopsticks on either side while scoring helps.)
Heat oil in a pan and sear the radish on both sides until golden. Pour in the sauce and simmer over low heat.
Spoon it over rice, then top with scallion and a swirl of sesame oil.
⚠️ (Update) Rushing out the door, I just ate it as is, but you should microwave the accordion-cut radish for 2 minutes before pan-cooking it!
⚠️ It's on the mild side for spooning over rice, so either season it more boldly or just eat it on its own without rice. It's good-for-you radish, after all.
