The chestnuts my mother gave me had been sitting in a corner of the freezer for a long time. I thought a chestnut paste would go well with the baguette I bought yesterday, so I cut back on the sugar and added hemp seeds to make it a little healthier. Butter Chestnut Paste Baguette.
Ingredients
One 20cm piece of baguette, 20g butter, a handful of toasted walnuts, (chestnut paste) 600g chestnuts, 300ml water, 200g xylose sugar, 1T honey, 2T hemp seeds (optional)
Steps
1. Let's start with the chestnut paste. Pour water into a pot, add 610g peeled chestnuts, and cook. Let cool slightly.
2. In a food processor, combine the chestnuts from step 1, 300ml water, 200g xylose sugar, and 1T honey, and blend until smooth.
3. Pour the chestnut puree from step 2 into a pot and cook over low heat, stirring.
4. Once it reaches the texture you want, pass it through a sieve, pressing with a spatula. Mix in the hemp seeds. The smooth chestnut paste is done.
5. Microwave the baguette along with a small bowl of water for 10 seconds, twice.
6. Split the baguette in half. Spread butter on one side and chestnut paste on the other. Lightly toast the walnuts in a pan and top with them.
