Today's breakfast is #vongolepasta from Genaro Contaldo, Jamie Oliver's colleague and mentor. He doesn't add salt to the pasta water, and I honestly didn't notice much difference either way. But when I tasted the broth, I felt it needed some butter, so I added 1t. That hits just right for my taste.
Ingredients
Spaghetti, clams, red chili pepper, garlic, olive oil, white wine, parsley, and 1t butter
Steps
1. Boil the spaghetti in boiling water.
2. Store-bought clams are usually already de-sanded, so just give them a light rinse in cold water.
3. Slice 1 red chili pepper and 3 cloves garlic.
4. Heat olive oil in a pan, sauté the red chili and garlic, add the clams, pour in white wine, and cover briefly with a lid. Once the clams open up, they're ready.
5. Add the spaghetti and some pasta water to the pan and cook a bit more. Taste it (Chef Genaro didn't add anything, but) I add 1t butter.
6. Plate the pasta, add the clams, and top with chopped parsley.
