I use the biweekly Uglyus @uglyus.market subscription delivery. There's a fun challenge in making good use of whatever random ingredients show up. As a bonus, it naturally cuts down on how often I use dawn delivery services, which eases the guilt that comes with that too.
#somtam made with chayote, which I got to know thanks to Uglyus.
Chayote has more water content than papaya, so instead of pounding it, toss it lightly together.
Ingredients

Steps
01
Score the shrimp and blanch thoroughly in boiling water.
02
Cut the corn lengthwise and torch it.
03
Julienne the chayote with a mandoline made for som tam.
04
(Keeping the sauce mild since it's breakfast) In a mixing bowl, pound 2 cloves garlic, 1T fish sauce, 1T coconut sugar, and 3 pepperoncino, then add 3 cherry tomatoes and 2T lemon juice and pound a bit more.
05
Add the prepared chayote, parsley, and shrimp to the mixture from step 4 and toss well.
06
Plate the som tam, top with the corn, a little som tam sauce, and finish with fried shallots~
