I woke up early because of a dry cough. The sun was out, and I happened to have some clotted cream that needed using up, so why not make some warm bite-sized scones?
Recipe for 6 bite-sized scones:
Measure out 150g all-purpose flour, 30g sugar, 1t baking powder, and a pinch of salt, and mix together. Cut 30g butter into pieces and work it into the measured dry ingredients.
Add 50ml milk and 1 egg, mix well, then pour into the dry ingredients and knead into a dough. (Set aside a little of the milk-egg mixture.) Wrap it well and let it rest in the fridge for about 30 minutes.
Take out the dough, roll it out with a rolling pin, cut rounds with a mousse ring, place them on a tray, and brush with the reserved milk-egg mixture. Bake in a 170°C oven for about 15 minutes.
Cut in half and spread with jam, then cream.
