She's also a tragic figure in her own right: imprisoned in a Nazi concentration camp during World War II, she was wounded in a bombing and died tragically not long after. Serves 1, about 500kcal, Spinach Mafaldine Pasta.

Ingredients

100g mafaldine, 1T ricotta cheese, salt, pepper, crushed red pepper flakes, (sauce) 5-6 stalks spinach, 1/2 avocado, 1/2 cup walnuts, 3 cloves garlic, 1T ricotta cheese, 1T lemon juice

Steps

1. Boil the mafaldine in salted water. 2. Wash 5-6 stalks of spinach thoroughly and roughly chop, roots and all. Heat olive oil in a pan, add the spinach, and sauté with salt, salt, pepper, pepper. 3. In a blender, combine the spinach from step 2, 1/2 avocado, 1/2 cup walnuts, 3 cloves garlic, 1T ricotta cheese, 1T lemon juice, and a pinch of salt and pepper, and blend until smooth. 4. Add the sauce from step 3 to a pan along with the boiled mafaldine and 1 cup pasta water, and mix well. Taste and season with salt. 5. Plate the noodles from step 4 and top with 1T ricotta cheese, pepper, and a little crushed red pepper flakes.
