Unfortunately, there's no way to eat beans raw. On the last day of the holiday, instead of meat, here's #beantaco for vegans, made with beans boiled down soft and blended in.

Ingredients

Tortillas (about 6 servings' worth), 1/2 cup mozzarella cheese, 1/4 cabbage, (bean mix) 3 cups beans, 1/2 onion, 1/4 cup oats, 1T soy sauce, 1T maple syrup, 1t mustard, 1t tomato paste, 1t paprika powder, (dressing) 3T mayonnaise, 1T ketchup, 1t mustard, 1t maple syrup, 1/4 chopped onion, 1 chopped pickle *The original recipe used only purple kidney beans.

Steps

1. Soak the beans in water the night before. About 3 cups. Boil the beans in salted water. 2. Mash the beans in a mixing bowl, then add 1/2 onion, 1/4 cup oats, 1T soy sauce, 1T maple syrup, 1t mustard, 1t tomato paste, and 1t paprika powder to make a dough. 3. Spread the bean dough thinly over a tortilla, then place it dough-side-down in a pan with olive oil to sear. 4. Flip, add mozzarella cheese on top, cover until the cheese melts, and plate it up. 5. Top the tortilla with long-cut cabbage and mayonnaise dressing (3T mayonnaise, 1T ketchup, 1t mustard, 1t maple syrup, 1/4 chopped onion, 1 chopped pickle). For a spicy kick, add a little paprika powder.
