The cilantro I bought last week at #Marche is still fresh — I wrapped it well in a damp kitchen towel. So it's #YamWoonsen again.
-Slice celery, onion, and tomato into a bowl. Finely chop the world's prettiest #cilantro and some scallion. (No chives on hand.)
-Blanch the glass noodles (made from konjac) in boiling water and drain, then — no need to boil fresh water — blanch the squid, shrimp, and ground pork in the same pot.
-Toss everything with a dressing of fish sauce, palm sugar, lime juice, a little minced garlic, and 2 crushed peperoncino peppers.
-Top with a little peanuts and cilantro.
