Endive, Ricotta, and Walnuts

20210123 Over a steaming plate of sweet and sour pork, a debate broke out between the 'sauce-on-top' camp and the 'sauce-on-the-side' camp. Someone, hungry and impatient, said, 'That's enough, let's just eat — what's the real difference between a white horse's rear end and a white horse's backside anyway?' Someone else caught that line immediately and pushed back: 'Are you trying to start a fight? There's clearly a difference between "rear end" and "backside."' And so the sweet and sour pork just kept getting colder. 'Ssam' (wrap) sounds like the Korean word for 'fight' (ssaum) — funnily enough, most fights really do start from pride, greed, misunderstanding, or a difference in ideas. Over the smallest of differences, we end up hurting each other, hurting ourselves, sometimes even having our fates upended. Maybe it's all just as trivial as the 'one-inch barrier of subtitles' that director Bong Joon-ho once talked about. I pull out the prettiest #endive in the world from deep in the back of the fridge and pair it with #ricottacheese, #walnuts, and #oliveoil. An #endive wrap for a peaceful world.
