elBulli-Style Mini Romaine Salad

Top it with a mint dressing made from a handful of mint, wholegrain mustard, a little salt and honey, and olive oil. This #miniromainesalad is made using a recipe from #ferranadria, owner-chef of the world-renowned restaurant #elbulli. This is my first time making a mint dressing, and it's so fragrant that it makes me want to only say pretty things.
