Drizzle bread with olive oil and toast until crisp. I meant to make soft, creamy scrambled eggs, but with no milk on hand, that part didn't quite work out. Sear the shrimp nicely in olive oil with herbs, salt, and pepper. Have the prettiest avocado in the world ready too. On a plate, layer the bread, then the scrambled eggs, a generous amount of mayonnaise, avocado, and shrimp, in that order. #shrimpavocadoopensandwich
