Summer is this brutally hot to give us a reason to slow down. To teach us not to push too hard, and how to actually rest. Most of all, to remind people who feel guilty about resting that what they should feel while resting isn't guilt, but calm.

This year's Great Heat has been anything but restful - the busiest I've been all year.
Flavored with sweet chili sauce, about 385kcal, Salmon Cheese Potato Bake.
1. Salt the salmon and let it sit about 10 minutes; once moisture beads out, pat dry with a paper towel.
2. Peel the potato, slice thin with a mandoline, arrange on a heatproof dish, cover with plastic wrap, and microwave for 3 minutes. Drizzle with a little olive oil. (The potato will stick to the dish once baked, so oil the bottom of the dish too.)
3. Lay the salmon over the potato, drizzle with sweet chili sauce, and top with mozzarella cheese. Bake at 200°C for 15 minutes.
4. Finish with pepper and a little chopped scallion.
