There's a saying about mulberry fields turning into blue seas, meaning so much time has passed and so much has changed. I looked into why mulberry trees specifically get used in that phrase — apparently mulberry trees used to be planted a lot on useless land, near wetlands or marshes. Anyway, mulberries have a subtle sweetness that's really charming.
About 315kcal mulberry toast
Ingredients
1 slice sourdough, 2T ricotta cheese, 1 cup mulberries, a little pistachio, mint (nice to have, but fine without)
Steps
1. Brush olive oil on the sourdough and toast both sides until crisp.
2. Let the sourdough cool slightly, spread ricotta cheese, and top with mulberries and chopped pistachios. A drizzle of honey would make it even better, but that's it for today~
