They're rich in an antioxidant called apigenin, which is said to help improve insulin resistance and ease blood sugar spikes. Plenty of fiber and high protein come as a bonus. The dressing is missing sumac (didn't have any) — adding it would make it tangier. With this week's fasting olive oil intake in mind, about 445kcal fava bean salad

Ingredients

2 cups fava beans, 2T ricotta cheese, (dressing) 3T olive oil, 2T red wine vinegar, 1t sesame seeds, 2T chopped roasted pistachios, 1T chopped mint, salt, pepper

Steps

1. Soak the fava beans in water for about 30 minutes. Add a pinch of salt to boiling water and boil the fava beans for 20-30 minutes. 2. Meanwhile, combine 3T olive oil, 2T red wine vinegar, 1t sesame seeds, 2T chopped roasted pistachios, 1T chopped mint, salt, and pepper, mixing evenly to make the dressing. 3. Drain the fava beans, remove excess moisture, put in a bowl, pour over the dressing, and mix evenly. 4. Put ricotta cheese on a plate and top with the fava beans. A little lemon juice~
