For an abundant Chuseok that still needs some upkeep, I recommend this #cucumbersalad.
The peanut butter is 100% peanuts - the very thing getting attention lately as a health food.
You'll need cucumber, celery leaves or cilantro, nuts, and peanut butter.
Mix 3 parts peanut butter, 1 part soy sauce, lemon juice, 1/4 part maple syrup, and 1 part water to make the dressing.
Cut the cucumber and toss with minced celery leaves, chopped pecans, and sesame seeds.
Pour the dressing over, mix well, plate it, and finish with a touch of chili oil.
Ingredients
- 1 cucumber
- Dressing (3T peanut butter, 1T soy sauce, 1T lemon juice, 1/4T maple syrup, 1T water)
- A handful of celery leaves
- 1T pecans
- 1t sesame seeds
- 1t chili oil
Steps
1. Mix 3T peanut butter, 1T soy sauce, 1T lemon juice, 1/4T maple syrup, and 1T water to make the dressing.
2. Cut the cucumber into bite-sized chunks.
3. In a mixing bowl, combine the cucumber from step 2 with celery leaves, chopped pecans, and sesame seeds, drizzle with the dressing from step 1, and mix well.
4. Plate and top with a touch of chili oil.
