I'd made something in the style of cucumber tataki + capellini before (see the June 2, 2024 breakfast), and that had the taste of summer. Today's cold cucumber somen has a different kind of charm. If I had to put it into words, maybe it's the taste of early summer? Anyway 👍

1. Wash the cucumber thoroughly, slice thin, put in a mixing bowl, and salt-cure with a pinch of salt and a little sugar. After 20-30 minutes, squeeze out the moisture.
2. Mix 1t minced garlic, 1t honey, 1T vinegar, 1T lemon juice, 1T plum extract, 1T fish sauce, and 3T perilla oil to make the dressing.
3. Boil the somen in salted water, adding cold water as it boils.
4. Put the somen in a bowl, top with the cucumber from step 1 and 1T ground sesame seeds, and drizzle with the dressing from step 2. Finish with bonito flakes.
