Ingredients
a little red cabbage, 1 orange, 1/2 cup mint, a little blue cheese, (dressing) 2T olive oil, 1T white wine vinegar, 1t Dijon mustard
Steps
1. Tear the red cabbage into bite-size pieces, put it in a mixing bowl, sprinkle with a little salt, and massage it with your hands. Let it sit while you prep the other ingredients — it seasons nicely and softens up.
2. Peel the orange with a knife and slice it crosswise.
3. Arrange the red cabbage, orange, mint, and blue cheese on a plate and drizzle with the dressing.
