There's a breakfast that finishes itself all alone overnight, standing proudly on its own, a testament to a night well spent maturing. Overnight Oats, or 'ONO' for short. Pour milk, yogurt, etc. in the right ratio over oatmeal the night before, tuck it in the fridge, and the next morning the dry, papery texture is gone entirely, replaced by a wonderful breakfast where the oats, milk, and yogurt have become one, melting away in your mouth like cotton candy, whispering 'it's me, oatmeal.' Adding fresh fruit on top would be even better, but if circumstances aren't ideal and all you've got lying around is wilting fruit, cook it down into a compote and add a bit on top. It's shockingly delicious.

On my way out the door early for a business trip, a roughly 750kcal green grape overnight oatmeal that last night made for me
Ingredients
1 cup (seedless) green grapes, 2 cups milk, 1T maple syrup, 1t vanilla extract, 1T lemon juice, 1t salt, plus 2 cups oatmeal, 2T chia seeds, (topping) a little green grapes, pistachios, peanut butter, Maldon salt
Steps
1. In a blender, combine 1 cup green grapes, 2 cups milk, 1T maple syrup, 1t vanilla extract, 1T lemon juice, and 1t salt, and blend.
2. Put 2 cups oatmeal and 2T chia seeds in a bowl, pour in the mixture from step 1, and let it sit in the fridge overnight.
3. Top with green grapes, chopped pistachios, and peanut butter. Add a little Maldon salt.
