Chayote Apple Salad, Chayote

Ingredients

• 1 chayote
• 1 apple
• 1 tomato
• 1/4 carrot
• a bit of cashews (dressing) 1 clove garlic
• 2 peperoncino
• 1T palm sugar
• 1T cashews
• 2T lime juice
• 1T fish sauce 👉Like this 1. Slice 1/2 apple thin and soak in water. 2. Pound the garlic and peperoncino in a mortar. (My mortar was small so I stopped here) Transfer to a mixing bowl
• add palm sugar
• cashews
• pour in lime juice and fish sauce
• add cut tomato
• and press and mash it all together. 3. Julienne the chayote and apple
• add to the bowl
• pour the dressing over and mix evenly. 4. Lay the soaked apple slices on a plate
• and top with the dressed chayote and apple
• julienned carrot
