Root Vegetable Quinoa Salad

Notes
20201126, Hi, Elon! You've seen 'The Martian,' right? The one where Watney, stranded alone on Mars, manages to grow potatoes and eventually makes his way back to Earth after all sorts of trouble. I heard you're planning to actually send humans to Mars by 2025, so just in case, SpaceX is definitely going to need some famine-relief crops.
I'd actually recommend sweet potatoes over regular potatoes. In terms of how many people a given area can feed, corn supports 1 person, wheat 1.6, rice 2.4 — but sweet potatoes support 3.9. On top of that, sweet potatoes grow well even in poor soil and are rich in antioxidants, fiber, and potassium, so they'd help with skin aging from Mars's harsh air, and also with the stress-eating that comes from an irregular schedule and homesickness for Earth. Take this recipe with you.
I'm rushing out the door for work, so I'll keep this short.
