Got a gift from a friend who'd been to Bangkok Design Week — a package with the 6 sauces used in Thai cuisine, gorgeous packaging befitting a design week. Opened up one of them, the black soy sauce. Approx. 400kcal #padseeew
Let's all agree to make pad see ew with rice noodles whenever possible. Glass noodles, not recommended 🥲🙃🤫
👉 A reasonable amount of glass noodles, 2 cloves garlic, 10 leaves kale, 1 stalk chives, 5 shiitake mushrooms, salt, white pepper, 1 egg, (sauce) 0.5T soy sauce, 0.5T sugar, 0.5T fish sauce, 1T oyster sauce, 1.5T dark soy sauce
(add 2-3T of sauce, taste, then add more)

1. Using glass noodles instead of rice noodles today. Soak wide glass noodles in warm water.
2. Mince 2 cloves garlic, cut 10 leaves of kale into bite-sized pieces, finely chop 1 stalk chives. Cut the 5 shiitake mushrooms (standing in for meat) into big chunks.
3. Heat a pan with oil, sauté the shiitake with salt and pepper, and set aside. (used in place of meat)
4. In the same pan, add a bit more oil, sauté the minced garlic, add the kale, and once wilted, add the glass noodles and sauce and stir-fry.
5. Push everything to one side of the pan, add oil, crack in 1 egg, scramble, then mix it all together. Add the shiitake back in and stir-fry together.
6. Plate and top with white pepper and chives.
