Today's breakfast borrows the concept from the signature dish at Kohok, an Italian restaurant set inside an 86-year-old renovated house in Bangkok's Chinatown: #PennePasta
Boil penne in salted water for a full 7-8 minutes. Trim the asparagus stalks with a peeler and cut them to penne size, adding them in. Toss in some green peas and blanch briefly too.
(Set aside a little pasta water.) Mix the boiled ingredients with 1T cream cheese and 1T pesto until well combined. If you like it thick and rich, leave it as is; for something softer, stir in a little pasta water.
Kohok means 'lie' in Thai — there's no restaurant like that in Chinatown.
