Eggplant Pizza

Letting it sit overnight gave it a deeper flavor — less sweet than store-bought sauce, but a bit more tangy. This morning I woke up, heated olive oil in a pan, and grilled some eggplant. I spread the tomato sauce on a store-bought tortilla and topped it with the grilled eggplant and mozzarella.
