It's not that long a stretch of time, but on days when I hand the cooking over to the oven, it somehow feels like I'm buying back time - a bit different from buying time in a way most people wouldn't relate to, like a fast-track pass.
"Meaty oyster mushroom" is a brand name - it's actually santari mushroom. Apparently it's branded meaty oyster mushroom because it's chewier and has more of a meat-like texture. I've used it instead of meat in various breakfasts, and it's quite good.
Even better roasted in the oven. About 240kcal, Baked Mushroom Steak.

Steps
01
Place the meaty oyster mushrooms on an oven pan, sprinkle with olive oil, salt, and pepper, and roast in a 200°C oven for 20 minutes.
02
(It'd be nice to make my own tomato sauce, but today I'm just using store-bought.) Put the tomato sauce on a plate and microwave for 30 seconds. Top with the mushrooms from step 1, parsley, and parmesan cheese.
